Quick, healthy, and easy. Serve as a salad or a main course.
Chickpeas (1 can or half a can)
1 Avocado, chopped
¼ Red Onion, diced
1 Tomato, diced
1 Bell Pepper, diced
2 Cloves garlic, minced
2 Limes, juiced
Fresh Cilantro (or parsley, or dill, whatever floats your
boat)
Salt and Pepper, to taste
Combine all ingredients. Stir and season to taste.
Cool it in the fridge before serving on a hot summer day. Or just mix it up and serve. Great with
a side of quinoa/black bean chips. Yumm!
